DONNA FRANCA WINE RESORT

Immersed in the heart of the “Road of Wine and Flavors of Marsala”, Donna Franca is a place with a thousand suggestions, where history, landscape, traditions and innovation have found a perfect synthesis.  FLORIO CELLARS 

The guided tour of the historic Florio Cellars starts with the majestic giant vats, eight unique specimens built at the end of the 19th century and still used to refine the marsala. After passing through the large vats, you can directly access the Sala Garibaldi, a large space that opens up to welcome the visitor and from which it is possible to catch a glimpse of the fascinating barrels. Here you can admire the weapons donated by Giuseppe Garibaldi to Vincenzo Florio, to thank him for the loyalty shown in 1860, and from here we proceed through the Sale Florio and Ingham-Woodhouse to finally discover the barrels. Fascinating places, 165 meters long interspersed with 104 arches, under which there are 1,400 caratelli and about 600 barrels and vats of different capacity. Crossing the threshold of the historic rooms you access the real Winery, a charming and magical environment where, in silence and stillness, about 5,500,000 liters of marsala are kept. After an exciting tour of about thirty minutes through the barrels, where the ancient tufa stone floor has been restored, you can enter the Donna Franca tasting room. Born from a new way of conceiving the spaces of the Cellar, in this Hall the tasting is transformed from a moment of pleasure into an evocative experience, which involves all the senses and solicits them with colors, sounds and perfumes. In this innovative space, obtained from one of the naves in tufa, the guest is welcomed by a background music, a play of suggestive lights and is conducted in the tasting by a virtual guide that accompanies him in the discovery of sensations, flavors and aromas unexpected. The visit to the winery ends inside the Enoteca Florio, an avant-garde store unique in Italy, which welcomes all the Duca di Salaparuta, Corvo and Florio wines, as well as a selection of excellences of craftsmanship and typical Sicilian products.


FAZIO CELLARS

Fazio Wines Winery includes six lines of wines: Seleccion Fazio, Classics, International, Sicilian Bollicine, Passiti and Grappa and Siculi. The structure that houses the winery of the Fazio winery has been equipped with the most modern technologies, respecting the Sicilian architectural style, in harmony with the landscape in which it is located.

The complex consists of two distinct areas. The receptive structure, in which the offices and the wine shop are located, and the productive structure, in which there is also a large underground barrique cellar. The Fazio winery also has temperature-controlled warehouses used to refine wines, where they are stored while awaiting their marketing. The grapes – immediately after the harvest – are vinified according to the type of wine to be produced. For white wines, after de-stemming, cold maceration of the skins in the must is carried out at a temperature of 4 ° C, a soft pressing of the grapes and a very slow thermocontrolled fermentation. For red wines, the grapes are first de-stemmed and the skins are left to macerate in the must at a controlled temperature of between 25 ° and 28 ° C, times varying according to the type of wine to be produced.
